Meatless Monday: Breakfast Burrito
I usually skip breakfast, but there was some leftover food in the fridge so I threw together this burrito.
The bread is a 100% whole wheat tortilla. I slathered it with mayo because, well, everything’s better with mayo
I sauteed one scrambled egg, red bell pepper, rice, diced avocado, cheese, and some pepperoncinis. (I love hot stuff.) It was quick, easy, and filling.
I think I’ll make another tomorrow…
